Ingredients

100 g/4 oz marshmallows

12 even-sized perfectly shaped
strawberries, unhulled

50 g/2 oz/1/2 cup desiccated
(shredded) coconut, toasted

50 g/2 oz any-sized
strawberries
-
Caster (superfine) sugar, to
taste

2.5 ml/1/2 tsp lemon juice
-
150 ml/2/3 cup double (heavy)
cream
Method:

Put the marshmallows in a bowl and stand the bowl
over a pan of hot water. Stir until melted. Push a
cocktail stick into each of the 12 strawberries.

Dip in the melted marshmallow to coat completely,
then coat with toasted coconut. Stick the cocktail
sticks in a potato and leave to set.

Meanwhile, mash the 50g/2 oz strawberries until
pulpy and sweeten to taste with the sugar. Spike
with the lemon juice.

Whip the cream until stiff. Fold in the strawberry
pulp. Pile on to four serving plates and arrange
three coconut strawberries attractively on each
plate.
