Syllabub Recipe
Ingredients

2 small lemons

150 ml/2/3 cup fruity white
wine

50 ml/3 1/2 tbsp brandy

450 ml/2
cups double
(heavy) cream

150 g/5 oz/2/3 cup
caster (superfine) sugar
Method:

Thinly pare the rind of 1 lemon. Cut into wafer thin
strips and boil in water for 2 minutes. Drain, rinse
with cold water and drain again.

Finely grate the
rind of the second lemon and squeeze the juice from
both. Mix the wine and brandy with the lemon juice.

Whip the cream and sugar until peaking. Gradually
whisk in the liquid until thick and softly peaking.

Spoon into six glasses and sprinkle with the
reserved lemon rind. Chill for at least 2 hours.
