Dessert Recipes - Zabaglione Recipe

Ingredients

  • 2 eggs

  • 25 g/2 tbsp caster (superfine) sugar

  • 45 ml/3 tbsp Marsala or sweet sherry

  • Sponge (lady) fingers, to serve


Method:

  1. Put the eggs, sugar and Marsala or sherry in a large bowl over a pan of gently simmering water.

  2. Whisk until thick, creamy and voluminous. (An electric whisk is quickest, a balloon whisk will give you greater volume.)

  3. Pour into four glasses and serve straight away with sponge fingers.
