Ingredients

100 g/4
oz/1
cup self-raising flour, plus extra for dusting

A pinch of salt
-
1 egg
-
250
ml/8
fl oz/1 cup milk and water, mixed

2
cooking (tart) apples, cored and cut into
rings

3
small pears, quartered
-
Oil,
for deep-frying
-
Caster (superfine) sugar, for sprinkling

Hot Lemon
Sauce, to serve
Method:
-
Sift the flour and salt into a bowl. Add the egg and
half the milk and water and beat until smooth.

Mix
with enough of the remaining liquid to form a thick,
smooth batter. Dust the pieces of fruit with flour.

Dip in the batter and deep-fry in the hot oil for
about 2-3 minutes until crisp and golden brown.

Drain on kitchen paper (paper towels), sprinkle with
caster sugar and serve with Hot Lemon Sauce.
