Dessert Recipes - Caribbean Bananas Recipe
Ingredients

1 orange
-
45 ml/3 tbsp cocoa
(unsweetened chocolate) powder

45 ml/3 tbsp light
brown sugar
-
A pinch of ground cinnamon
-
45 ml/3 tbsp rum or orange liqueur

4 bananas
-
Fromage frais, to serve
Method:

Put four slices from the orange for decoration.
Grate the rind and squeeze the juice from the
remainder into a frying pan (skillet).

Add the
cocoa, sugar and cinnamon and heat gently, stirring,
until the sugar melts. Add the rum or orange
liqueur.

Peel the bananas and cut into thick chunks.
Add to the pan. Baste with the sauce, cover and cook
gently for 4 minutes until the bananas are just
cooked but still hold their shape.

Spoon into
serving dishes. Top each with an orange twist and a
spoonful of fromage frais and serve
warm.
