Dessert Recipes - Christmas Pancakes Recipe
Ingredients

1 quantity of
Simple Pancakes
-
350 g/12 oz/1 medium
jar of mincemeat
-
15 ml/1 tbsp brandy
-
2 apples, grated
-
Icing (confectioners')
sugar, sifted
-
Greek-style Yoghurt, to serve
Method:
-
Make the pancakes and keep warm on a plate over a
pan of hot water. Mix the mincemeat with the brandy
and apple.
-
Spread over the pancakes and roll up.
Place in a flameproof dish.
-
Sprinkle liberally with
icing sugar and flash under a hot grill (broiler)
until the top begins to caramelize. Serve with
Greek-style Yoghurt.
