Dessert Recipes - Normandy Omelet Recipe

Ingredients

  • 6 eggs

  • 75 ml/5 tbsp icing (confectioners') sugar

  • 50 g/2 oz/1/4 cup unsalted (sweet) butter

  • 2 crisp green eating (dessert) apples, thinly sliced

  • 45 ml/3 tbsp double (heavy) cream

  • 30 ml/2 tbsp calvados


Method:

  1. Beat the eggs with 30 ml/2 tbsp of the icing sugar. Melt 25 g/1 oz/ 2 tbsp of the butter in a frying pan (skillet) and fry (sauté) the apple slices for 5 minutes until golden, turning occasionally.

  2. Add the cream, calvados and 30 ml/2 tbsp of the remaining sugar and reduce the heat to very low.

  3. Melt the remaining butter in a large frying pan and add the egg mixture.

  4. Cook, lifting and stirring, until beginning to set, then cook until golden brown underneath.

  5. Spread the apple mixture over half the omelets and fold over. Slide out of the pan and sift the remaining icing sugar over.
