Ingredients

large cooking (tart) apple, grated

65 g/2 1/2 oz/scant

cup caster
(superfine) sugar

g/8 oz/2 cups self-raising whole meal flour

baking powder

ml/1/2 tsp mixed (apple-pie) spice

50 g/2 oz/1/4 cup
butter or margarine,
melted

ml/4-5 tbsp milk

for deep-frying
Method:

Put the apple in a bowl with 15 ml/1 tbsp of the
caster sugar and the flour, baking powder and spice.

Mix well, Stir in the melted butter or margarine and
enough of the milk to form a soft but not sticky
dough. Knead gently on a lightly floured surface.

Roll out thickly and cut into 8-10 rounds using a
7.5 cm/3 in cutter. Cut out the centers using a 3
cm/1 1/2 cutter. Re-roll the cuttings and
make more rings.

Deep-fry in hot oil for 3-4 minutes
until golden brown and cooked through, turning once.

Drain on kitchen paper (paper towels). Toss in the
remaining caster sugar and serve warm.
