Dessert Recipes - Pfannkuchen Recipe
Ingredients

75 g/3 oz/3/4
cup plain (all-purpose) flour
-
45 ml/3 tbsp caster
(superfine) sugar
-
3 eggs
-
300 ml/1 1/4 cups
milk
-
Oil,
for shallow-frying
-
Unsalted (sweet)
butter, softened
-
Black cherry jam
(conserve)
-
5 ml/1 tsp ground
cinnamon
Method:

Put the flour and sugar in a bowl. Break in the eggs
and add half the milk. Beat well until smooth.

Stir
in the remaining milk. Leave to stand for at least
20 minutes. Heat a little oil in a large frying pan
(skillet) and pour off the excess.

Add 60-75
ml/4-5 tbsp of the batter and swirl the pan to
coat the
base.
Cook
until set and golden
underneath.

Flip over and cook the other side. Slide
out of the pan and spread with a little butter and
jam. Roll up and place in a serving dish.

Keep warm
in a low oven while cooking the remainder. Dust with
the cinnamon. Serve very hot.
