Dessert Recipes - Pineapple Flambe Recipe

Ingredients

  • 1 ripe pineapple

  • 50 g/2 oz/1/4 cup butter

  • 45 ml/3 tbsp kirsch

  • 30 ml/2 tbsp caster (superfine) sugar

  • 45 ml/3 tbsp brandy

  • Whipped cream, to serve


Method:

  1. Cut all the rind off the pineapple and cut the fruit into eight thin slices. Cut out the hard core of each slice.

  2. Melt the butter in a large frying pan (skillet) or chafing dish. Add the fruit and sprinkle with the kirsch and sugar. Cook for 2 minutes, then turn over.

  3. Add the brandy, ignite and shake the pan until the flames subside. Serve immediately straight from the pan with whipped cream.
