Dessert Recipes - Poor Knights Pudding Recipe
Ingredients

slices of white bread, crusts removed

60 ml/4 tbsp
strawberry jam (conserve)

2 eggs, beaten

150 ml/2/3 cup milk

g/3 oz/1/3 cup butter

Caster (superfine) sugar,
for sprinkling

Whipped cream, to serve
Method:

Sandwich together the bread slices in pairs with the
jam. Beat together the eggs and milk in a large
shallow dish and add the sandwiches.

Turn in the egg
mixture and leave to soak for a few minutes. Melt
half the butter in a frying pan (skillet) and fry (sauté)
half the sandwiches until golden brown on each side.

Sprinkle with caster sugar. Repeat with the
remaining sandwiches. Serve hot with whipped cream.
