Dessert Recipes - Raspberry Fondue Recipe

Ingredients

  • 350 g/12 oz raspberries

  • 30 ml/2 tbsp icing (confectioners') sugar

  • 10 ml/2 tsp corn flour (cornstarch)

  • 30 ml/2 tbsp water

  • Bite-sized Meringues and large seedless green grapes, to serve

  • 300 ml/1 1/4 cups creme fraiche


Method:

  1. Puree the raspberries in a blender or food processor, then pass through a sieve (strainer) to remove the seeds. Place in the fondue pot with the icing sugar.

  2. Blend together the corn flour and water and stir in. Cook until bubbling and thickened. Turn down the heat and stir from time to time.

  3. Put the meringues and piles of grapes on serving plates with a small bowl of crème fraiche on each. Serve with fondue forks.
