Dessert Recipes - Strawberry and Cream Pancakes Recipe

Ingredients

• 1 quantity of Simple Pancakes

• 515 g/1 lb 3 oz/1 very large can of strawberries

• 30 ml/2 tbsp corn flour (cornstarch)

• Finely grated rind and juice of 1 orange

• 150 ml/2/3 cup double (heavy)

• cream, whipped

Method:

1. Make the pancakes and keep warm on a plate over a pan of hot water Empty the strawberries and juice into a pan.

2. Blend the corn flour with the orange rind and juice and stir into the pan. Bring to the boil and cook for 2 minutes, stirring.

3. Divide between the pancakes, roll up and place on serving plates. Top with a large spoonful of whipped cream and serve straight away.
