Dessert Recipes - Strawberry and Orange Pancakes Recipe

Ingredients

• 1 quantity of Simple Pancakes

• 3 oranges

• 100 g/4 oz strawberries, sliced

• 30 ml/2 tbsp sweet vermouth

• 45 ml/3 tbsp fromage frais

• 1 quantity of Smooth Strawberry Sauce

Method:

1. Make the pancakes and keep warm on a plate over a pan of hot water.

2. Holding the oranges over a small saucepan, cut off all the skin and pith, then cut the fruit into segments both sides of the membranes.

3. Place the segments in the saucepan. Add the strawberries and vermouth. Heat through but do not boil.

4. Put a spoonful of fromage frais on each pancake. Divide the fruit mixture between them and fold each into four.

5. Transfer to warmed serving plates and drizzle a little Smooth Strawberry Sauce over each and serve straight away.
