Dessert Recipes - Sweet Souffle Omelet Recipe

Ingredients

  • 2 eggs, separated

  • 15 ml/1 tbsp caster (superfine) sugar

  • 15 ml/1 tbsp hot water

  • A knob of butter

  • 15-30 ml/1-2 tbsp strawberry or raspberry jam (conserve), warmed

  • Icing (confectioners') sugar, for dusting


Method:

  1. Beat together the egg yolks and sugar until thick and pale. Stir in the hot water. Whisk the egg whites until stiff and fold in with a metal spoon.

  2. Heat the butter in a small omelet pan (skillet). Add the egg mixture and cook until the underside is golden brown and the mixture is almost set.

  3. Place under a hot grill (broiler) until the top is risen and golden and the mixture is just set. Remove from the grill.

  4. Quickly spread one half with the warm jam and fold over. Slide out of the pan and dust with sifted icing sugar.

  5. For a spectacular effect, heat a metal skewer in a gas flame until red hot and use to sear the top in a lattice pattern. Serve straight away.
