Dessert Recipes - Trifling Pancakes Recipe

Ingredients

  • 1 quantity of Simple Pancakes

  • 25 g/1 oz/1/4 cup corn flour (cornstarch)

  • 25 g/1 oz/2 tbsp caster (superfine) sugar

  • 1 egg

  • 300 ml/1 1/4 cups milk

  • 4 bananas

  • Lemon juice

  • 45 ml/3 tbsp chopped mixed nuts

  • 90 ml/6 tbsp strawberry jam (conserve)

  • Icing (confectioners') sugar, for dusting


Method:

  1. Make the pancakes. Put the corn flour in a saucepan and blend in the sugar and egg until smooth.

  2. Stir in the milk. Bring to the boil and cook for 2 minutes, stirring all the time, until thickened and smooth.

  3. Place a circle of wet greaseproof (waxed) paper over the top to prevent a skin forming and leave until cold.

  4. Thinly slice the bananas and toss in a little lemon juice. Stir into the cold custard with the nuts. Place one pancake on a serving plate and spread with a quarter of the jam.

  5. Top with a second pancake and add a third of the banana custard. Repeat the layers, finishing with a pancake.

  6. Dust the top of the stack with icing sugar and serve cut into wedges.
