Dessert Recipes - Tropical Banana Fritters Recipe
Ingredients

100 g/4 oz/1 cup
desiccated (shredded) coconut
-
2 bananas, mashed
-
75 g/3 oz/1/3 cup dark
brown sugar
-
Finely grated rind of 1 lime
-
30 ml/2 tbsp dark rum
-
1.5 ml/1/4 tsp baking
powder
-
Oil, for deep-frying

Fluffy Boozy Cream
Topping, to serve
Method:
-
Deserve 25 g/1 oz/1/4 cup of the coconut and put
the remainder in a bowl with the mashed bananas,
sugar, lime rind, rum and baking powder.

Mix
thoroughly. Shape into small balls and roll in the
remaining coconut. Deep-fry in hot oil for about 3
minutes until golden brown.

Drain on kitchen paper
(paper towels) and serve hot with Fluffy Boozy Cream
Topping.
