Dessert Recipes - Tropical Fondue Recipe

Ingredients

  • 425 g/15 oz/1 large can of coconut milk

  • 75 g/3 oz creamed coconut, chopped

  • 50 g/2 oz/2/3 cup caster (superfine) sugar

  • 20 ml/4 tsp corn flour (cornstarch)

  • 150 ml/2/3 cup single (light) cream

  • Banana chunks, dipped in lemon juice, slices of mango, star fruit and/or pawpaw, fresh pineapple cubes and squares of gingerbread, to serve


Method:

  1. Put the coconut milk, creamed coconut and sugar in the fondue pot and stir until smooth.

  2. Blend the corn flour with the cream and stir into the pot. Cook, stirring until the mixture thickens. Turn down the heat to very low.

  3. Arrange the tropical fruits and gingerbread on small serving plates and serve with fondue forks to spear the dippers and dip into the pot.
