Dessert Recipes - Velvet Cherry Pancakes Recipe
Ingredients

quantity of Simple Pancakes

g/7 oz/scant 1 cup
low fat soft
cheese

g/15 oz/1 large can of cherry pie
filling

ml/2 tbsp water

ml/1 tbsp lemon juice

ml/3 tbsp cherry brandy or kirsch
Method:

Make the pancakes. Spread each with a little of the
soft cheese and fold into quarters.

Turn the pie
filling into the frying pan (skillet) and add the
water and lemon juice. Heat until bubbling, stirring
all the time.

Add one pancake, bathe in sauce and
push to one side of the pan before adding the next.

When all the pancakes are in the pan, pour over the
cherry brandy or kirsch and ignite.
-
Shake the pan
gently until the flames subside, then serve straight
away.
