Pastries Dessert Recipes - Christmas Peach Parcels Recipe

Ingredients

  • 8 sheets of filo pastry (Paste)

  • 75 g/3 oz/1/3 cup butter, melted

  • 410 g/1 large can of peach halves, drained, reserving the juice

  • 450 g/1 lb/1 medium jar of mincemeat


Method:

  1. For each parcel, brush a pastry sheet with a little butter. Fold in half width ways and brush again.

  2. Place a peach half in the centre and add a tablespoonful of mincemeat to the cavity. Draw the pastry up over the fruit to form a parcel. Transfer to a buttered baking (cookie) sheet.

  3. Brush with a little more butter. Repeat with the remaining peach halves.

  4. Bake in a preheated oven at 200C/400F/gas mark 6 for about 15 minutes until golden brown. Serve hot or cold with a little of the reserved juice poured over.
