Recipes - Fresh Peach Dumplings Recipe
Ingredients

225 g/8 oz/2 cups plain (all-purpose) flour

100 g/4 oz/1/2 cup unsalted (sweet) butter, diced

30 ml/2 tbsp caster (Superfine) sugar

1 egg, beaten
-
15 ml/1 tbsp light brown sugar
-
5 ml/1 tsp ground cinnamon
-
15 ml/1 tbsp ground almonds
-
4 peaches, skinned, halved and stoned (pitted)

Melted butter, for brushing

Classic Custard Sauce, to serve
Method:

Put the flour in a bowl. Add the butter and rub in
with the fingertips.
Stir in half the caster sugar. Mix with enough egg
to form a firm dough.

Knead gently on a lightly
floured surface. Wrap in Clingfilm (plastic wrap)
and chill for 30 minutes. Mix together the brown
sugar, cinnamon and almonds.

Spoon into the cavities
of the peaches. Roll out the pastry (paste) and cut
into quarters. Re-form the peach halves in pairs and
place on the centers of the rounds.

Brush the edges
of the pastry with water and gather up over
the fruit to cover completely. Place on a baking
(cookie) sheet, sealed-sides down. Brush with a
little melted butter and sprinkle with the remaining
caster sugar.

Bake in a preheated oven at 200°C/400°P/gas mark 6
for about 30 minutes until a rich golden brown.
Serve warm with Classic Custard Sauce.
