Method:
-
Mix the apple with the sultanas, almonds, mint and
granulated sugar.
-
Roll out the pastry to a
rectangle
about
40 x 30 cm/16
x
12 in and cut
into eight equal rectangles. Divide the apple
mixture between the centre of each rectangle.
-
Brush
the long edges with milk. Roll up over the filling
and place sealed-sides down on a dampened baking
(cookie) sheet.

Pinch the pastry firmly each side of
the filling to form cracker shapes. Brush with milk
and sprinkle with caster sugar.

Bake in a preheated
oven at 220C/425F/gas mark 7 for about 10
minutes until crisp and golden.

Mix the icing sugar
with a little lemon juice until the consistency of
thick cream.

Drizzle over the crackers, stud with
silver balls and serve hot. (Or leave until cold and
add the icing (frosting) and decoration when ready
to serve.).
