Dessert Recipes - Blackcurrant Cap Pudding Recipe

Ingredients

  • Butter, for greasing

  • 45ml/3 tbsp blackcurrant jam

  • 10g/1 cup plain (all-purpose) flour

  • a pinch of salt

  • 2 eggs

  • 300ml/1 1/4 cup milk

  • 25g/2 tbsp caster sugar


Method:

  1. Grease a 900 ml/3 3/4 cup pudding basin. Put the honey in the base, then add the raisins.

  2. Sift the flour and salt into a bowl. Beat in the eggs and half the milk until smooth, then stir in the remaining milk and the sugar.

  3. Pour over the raisins. Cover with a double thickness of greased greaseproof (waxed) paper or foil and steam for 1 1/2 hours.
