  Dessert Recipes - Syrup Sponge Pudding Recipe

Ingredients

  • Butter, for greasing

  • 45 ml/3 tbsp golden (light corn) syrup

  • 100 g/4 oz/1/2 cup soft tub margarine

  • 100 g/4 oz/1/2 cup caster (superfine) sugar

  • 2 eggs

  • 175 g/6 oz/1 1/2 cups self-raising flour

  • 5 ml/1 tsp baking powder

  • 30 ml/2 tbsp milk

  • Extra syrup and custard or cream, to serve


Method:

  1. Grease a 1.2 liter/2 pt/5 cup pudding basin. Put the syrup in the base.

  2. Put the margarine, sugar, eggs, flour, baking powder and milk in a large mixing bowl and beat well until smooth. Spoon into the basin and level the surface.

  3. Cover with a double thickness of greased greaseproof (waxed) paper or foil with a pleat in the centre to allow for rising.

  4. Twist and fold under the rim of the basin to secure. Steam for 2 hours. Turn out and serve with extra golden syrup and custard or cream.
