Dessert Recipes - Autumn Pudding Recipe

Ingredients

  • 5-6 slices of white bread, crusts removed

  • 500 g/18 oz/1 packet of frozen forest fruits, thawed

  • 75 g/3 oz/1/3 cup caster (superfine) sugar

  • Fromage frais, to serve


Method:

  1. Line a 900 ml/3 3/4 cup pudding basin with some of the bread. Stew the fruit in a pan with the sugar for 3 minutes.

  2. Turn into the basin. Top with the remaining bread, cutting it to fit completely with no gaps.

  3. Stand the basin on a small plate, cover with a saucer and weigh down with weights or cans of food. Leave to cool, then chill overnight.

  4. Turn out on to a shallow serving dish and serve with fromage frais.
