Ingredients

4 trifle sponges

ml/4 tbsp strawberry jam (conserve)

white vermouth or
sherry

ml/3 tbsp pineapple juice

large ripe bananas

cups whipping cream

Halved glace (candied) cherries and
angelica leaves, to decorate
Method:

Blend the custard powder and sugar with a little of
the milk in a saucepan. Stir in the remaining milk
and the single cream.

Bring to the boil and cook for
2 minutes, stirring all the time, until thickened
and smooth. Cover with a circle of wetted
greaseproof (waxed) paper and leave to cool.

Split
the sponges horizontally and sandwich together with
the jam. Cut into pieces and place in a glass
serving dish.

Spoon over the vermouth or sherry and
pineapple juice. Slice the bananas and stir into the
cool custard.

Spoon over the sponges. Chill for 1
hour to allow the flavors to develop.

Whip the
cream until softly peaking. Spread over the custard.
Decorate with halved glace cherries and angelica
leaves.
