Dessert Recipes - Banana Trifle Recipe

Ingredients

  • 45 ml/3 tbsp custard powder

  • 30 ml/2 tbsp granulated sugar

  • 300 ml/1 1/4 cups milk

  • 300 ml/1 1/4 cups single (light) cream

  • 4 trifle sponges

  • 60 ml/4 tbsp strawberry jam (conserve)

  • 45 ml/3 tbsp sweet white vermouth or sherry

  • 45 ml/3 tbsp pineapple juice

  • 2 large ripe bananas

  • 300 ml/1 1/4 cups whipping cream

  • Halved glace (candied) cherries and angelica leaves, to decorate


Method:

  1. Blend the custard powder and sugar with a little of the milk in a saucepan. Stir in the remaining milk and the single cream.

  2. Bring to the boil and cook for 2 minutes, stirring all the time, until thickened and smooth. Cover with a circle of wetted greaseproof (waxed) paper and leave to cool.

  3. Split the sponges horizontally and sandwich together with the jam. Cut into pieces and place in a glass serving dish.

  4. Spoon over the vermouth or sherry and pineapple juice. Slice the bananas and stir into the cool custard.

  5. Spoon over the sponges. Chill for 1 hour to allow the flavors to develop.

  6. Whip the cream until softly peaking. Spread over the custard. Decorate with halved glace cherries and angelica leaves.
