Dessert Recipes - Caramel Oranges Recipe

Ingredients

  • 6 oranges

  • 175 g/6 oz/3/4 cup granulated sugar

  • 100 ml/6 1/2 tbsp cold water

  • 100 ml/6 1/2 tbsp hot water

  • Almond Tuiles, to serve


Method:

  1. Thinly pare the rind off one of the oranges and cut into very thin strips. Boil in a little water for 3 minutes, then drain, rinse with cold water and drain again.

  2. Cut off all the rind and pith from all the oranges and cut the fruit into thick slices. place in a shallow glass dish.

  3. Place the sugar and cold water in a saucepan and stir well, then heat gently without stirring until the sugar has completely dissolved.

  4. Bring to the boil and boil until the mixture is a rich golden brown. Using oven gloves to protect from spluttering, remove from the heat and pour the hot water into the caramel, then return to the heat and stir until the caramel has dissolved.

  5. Cool slightly, then pour over the oranges and leave until cold. Sprinkle the orange shreds over and chill until ready to serve with Almond Tuiles.
