Ingredients
Method:

Halve the melon and discard the seeds. Either scoop
the flesh into balls with a melon bailer or peel
away the skin and dice the flesh.

Place all the
ingredients including about 6 small mint sprigs in a
glass bowl and chill for at least 1 hour to allow
the flavors to develop.
-
Remove the sprigs of mint
and decorate with a few fresh sprigs before serving
topped with spoonfuls of fromage frais.
