Ingredients

oranges, peeled

Salt
and freshly ground black pepper

Cumin seeds, toasted and
finely crushed

Cayenne

ml/8 fl
oz/1 cup thick plain yoghurt
-
20 ml/4
tsp caster (superfine) sugar
-
5 ml/1 tsp finely grated
fresh root ginger
Method:

Put each orange into six slices, then cut each slice
in half. Sprinkle one side of each very lightly with
salt, pepper, the crushed cumin and cayenne.

Arrange
overlapping in a circle on four small plates,
leaving a space in the middle. Cover with Clingfilm
(plastic wrap) and chill.

Meanwhile, blend together the yoghurt, sugar and
ginger, adding crushed cumin and cayenne to taste.
-
Spoon into the centers of the fruit rings and serve
straight away.
