Dessert Recipes - Flaming Apples Recipe

Ingredients

  • 100 g/4 oz/1/2 cup light brown sugar

  • 300 ml/1 1/4 cups water

  • A pinch of ground cloves

  • 4 eating (dessert) apples, peeled and cored but left whole

  • 60 ml/4 tbsp dark rum

  • Fromage frais, to serve


Method:

  1. Put the sugar and water in a large shallow saucepan with the cloves and heat gently until the sugar has dissolved.

  2. Add the apples and bring to the boil. Cover, reduce the heat and simmer gently for about 20 minutes, basting frequently, until the apples are translucent.

  3. Carefully lift the fruit out on to serving dishes. Boil the syrup rapidly until well reduced and syrupy. Pour over the apples.

  4. Warm the rum in a large soup ladle. Ignite and pour over the apples and serve while still flaming, with fromage frais to spoon over.
