Ingredients

75 g/3 oz/1/2 cup dried figs

g/2 oz/1/3 cup dried, stoned (pitted) dates

ml/2 cups water

g/8 oz/1 cup granulated sugar

30 ml/2 tbsp dry sherry

1
large red eating (dessert) apple,
quartered and sliced

large green eating apple, quartered and
sliced

bananas, thickly sliced

ml/1 tbsp lemon juice

3
clementines, segmented
-
8
glace (candied) cherries
-
2
pieces of stem ginger in syrup,
chopped

15
ml/1 tbsp ginger syrup from the jar

Chantilly
Cream,
to serve
Method:
-
Soak
the figs and dates in the water for at least 6 hours
or overnight. Place in a saucepan and add the sugar.

Heat gently until the sugar dissolves, then simmer
gently for 5 minutes. Stir in the sherry.

Toss the
apple and banana slices in the lemon juice. Add to
the pan with the remaining ingredients.

Bring to the
boil again and simmer for 3 minutes. Turn into a
serving dish and serve hot with Chantilly Cream.
