Dessert Recipes - Italian English Pudding Recipe

Ingredients

  • 100 g/4 oz/1 cup plain (semi-sweet) chocolate

  • 300 ml/1 1/4 cups double (heavy) cream

  • 75 g/3 oz/1 small packet of sponge (lady) fingers

  • 175 ml/3/4 cup  sweet white wine

  • 30 ml/2 tbsp brandy

  • 25 g/1/4 cup pistachio nuts, chopped

  • 30 ml12 tbsp glace (candied) cherries, chopped

  • Zabaglione, to serve (optional)


Method:

  1. Melt the chocolate in a bowl over a pan of hot water or in the microwave. Lightly whip the cream and whisk in the melted chocolate.

  2. Place the sponge fingers in a shallow glass dish and pour over the wine and brandy. Line a 15 cm/6 in round, deep, loose bottomed cake tin (pan) with baking parchment.

  3. Spread a layer of chocolate cream in the base. Top with a layer of the soaked sponge and sprinkle with some of the nuts and cherries.

  4. Repeat the layers until all the ingredients are used, finishing with a layer of sponge. Cover with foil and chill until firm.

  5. Turn out on to a serving plate and serve plain or with Zabaglione.
