Dessert Recipes - Mocha Orange Trifle Recipe
Ingredients

100 g/4
oz/1/2 cup
butter, softened

100 g/4
oz/1/2 cup
caster (superfine) sugar

4 egg yolks
-
15 ml/1 tbsp instant
coffee powder, plus extra for dusting

15 ml/1 tbsp hot water
-
1 chocolate Swiss (jelly) roll, sliced

15-30 ml/1-2 tbsp
coffee liqueur

300 g/11 oz/1 medium can of mandarin oranges

300 ml/1 1/4 cups double
(heavy) cream
Method:

Beat together the butter and sugar. Beat in the egg
yolks. Blend the coffee with the water and beat into
the mixture.

Place the bowl over a pan of hot water
and whisk with an electric beater until thick and
fluffy. Arrange the Swiss roll slices in a glass
serving dish.

Drizzle with the coffee liqueur.
Reserve a few of the mandarin oranges for decoration
and spoon the remainder over the sponge, adding
enough of the juice to moisten thoroughly.

Spoon
over the coffee mixture and chill for at least 2
hours to allow the flavors to develop.

Whip the cream until softly peaking. Spread over the
surface and dust lightly with coffee powder and the
reserved orange segments.
