Ingredients
Method:

Thinly pare the rind off two of the oranges. Cut
into thin strips and reserve.

Discard all the pith
from the pared oranges and the rind and pith from
the other two.

Put the sugar and water in a saucepan
with the mint. Heat gently, stirring, until the
sugar has dissolved.

Add the oranges and the thin
strips of rind. Cover and poach gently for 5
minutes. Remove the mint.
-
Transfer to serving dishes
and serve hot with Shortbread Triangles.
