Dessert Recipes - Oranges Raffles Recipe

Ingredients

  • 6 oranges

  • 3 trifle sponges

  • 30 ml/2 tbsp sherry

  • 250 ml/1 cup double (heavy) cream

  • A few drops of vanilla essence (extract)

  • 30 ml/2 tbsp caster (superfine) sugar

  • Toasted flaked (slivered) almonds


Method:

  1. Cut off and discard the rounded ends of the oranges (they will stand up better on the stalk ends) and scoop out the fruit, using a serrated knife.

  2. Chop fairly finely and place in a bowl with any juice. Crumble in the trifle sponges and add the sherry. Mix well and spoon back into the orange shells.

  3. Stand the oranges in a glass dish. Whip the cream until peaking. Whisk in the vanilla and caster sugar.

  4. Pipe or swirl on top of the oranges and sprinkle with almonds. Chill for at least 1 hour to allow the flavors to develop.
