Ingredients
Method:

Plunge
the peaches in boiling water for 30 seconds. Drain
and peel off the skins. Halve, remove the stones
(pits) and dice the flesh.

Place in four champagne
flutes or wine goblets. Sprinkle with the sugar and
add the brandy.
-
Leave to soak for 5 minutes. Top up
with chilled champagne and serve straight away.
