Dessert Recipes - Pears with Passion Fruit Puree Recipe

Ingredients

  • 4 ripe pears, peeled, quartered and cored

  • 4 passion fruit

  • 300 ml/1 1/4 cups sweet white wine

  • 15 ml/1 tbsp clear honey

  • 15 ml/1 tbsp corn flour (cornstarch)

  • 60 ml/4 tbsp water

  • Juice of 1/2 lemon

  • Viennese Fingers, to serve


Method:

  1. Put the pear quarters in four serving dishes. Halve the passion fruit and scoop the flesh out into a small bowl.

  2. Warm the wine and honey together and bring just to the boil. Blend together the corn flour and water and pour on the hot liquid, stirring.

  3. Return to the pan, bring to the boil and cook for 2 minutes, stirring. Stir in the passion fruit pulp and simmer for a further minute.

  4. Spike with lemon juice, if necessary. Spoon the sauce over the pears and leave to cool so the flavors mingle. Chill before serving with Viennese Fingers.
