Dessert Recipes - Peche Royale Recipe

Ingredients

  • 40 g/1 1/2 oz/3 tbsp granulated sugar

  • 150 ml/2/3 cup water

  • 1 thick strip of lemon rind

  • 30 ml/2 tbsp brandy

  • 6 peaches, skinned, halved and stoned (pitted)

  • 150 ml/2/3 cup double (heavy) cream

  • 30 ml/2 tbsp icing sugar

  • 100 g/4 oz small, ripe strawberries, sliced

  • 30 ml/2 tbsp chopped pistachio nuts


Method:

  1. Put the sugar and water in a saucepan with the lemon rind and heat gently, stirring, until the sugar dissolves. Bring to the boil.

  2. Add half the brandy and the peaches, reduce the heat and poach gently for 3-4 minutes until the peaches are just tender but still holding their shape. Leave to cool in the syrup.

  3. Carefully lift the peaches out of the syrup and place cut-sides up in serving dishes.

  4. Whip the cream with the icing sugar and the remaining brandy. Fold in the strawberries and pile on the peach halves.

  5. Sprinkle with pistachio nuts and drizzle the peach syrup round the edges. Chill until ready to serve.
