Ingredients
Method:

Slice
the top off the pineapple about
4 cm/1 1/2 in down from the leaves. Reserve for a lid.

Scoop out the flesh, using a serrated knife, leaving
the skin intact. Chop the flesh, discarding any hard
core.

Place in a bowl with the dates and bananas and
toss gently. Halve the passion fruit and scoop the
seeds into the bowl.

Blend together the sugar, apple
juice and rum until the sugar dissolves. Add to the
bowl and toss gently. Chill the fruit mixture and
the pineapple shell.

When ready to serve, spoon the
fruit back into the pineapple, and replace the lid
or place it to one side of the pineapple.
