Dessert Recipes - Prunes and Almonds in Port Recipe

Ingredients

  • 450 g/1 lb/2 2/3 cups prunes

  • 1.2 liters/2 pts/6 cups water

  • Thinly pared rind of 1 orange

  • 100 g/4 oz/1 cup blanched almonds

  • 150 ml/2/3 cup port

  • 15 ml/1 tbsp brandy

  • Caster (superfine) sugar

  • Greek-style Yoghurt, to serve


Method:

  1. Put the prunes in a large pan. Cover with the water and leave to soak overnight.

  2. Add the orange rind. Bring to the boil, reduce the heat and simmer gently for 15 minutes until tender. Add the almonds, port and brandy and sweeten to taste with caster sugar.

  3. Bring back to the boil, reduce the heat and simmer very gently for 10 minutes. Remove the fruit and nuts with a draining spoon and place in a serving dish.

  4. Boil the syrup rapidly until reduced by half. Pour over the fruit and leave until cold, then chill. Serve with Greek-style Yoghurt.
