Ingredients

4 trifle
sponges
-
350 g/12 oz
frozen raspberries, thawed

30 ml/2 tbsp
caster (superfine) sugar
-
Apple juice
-
300 ml/1 1/4
cups vanilla yoghurt
-
300 ml/1 1/4
cups double (heavy) cream
-
Demerara
sugar
Method:

Break up the sponges in a glass serving bowl. Cover
with the thawed raspberries and their juice.

Sprinkle with the sugar and enough apple juice to
moisten the sponges completely. Crush the fruit
lightly.

Whip together the yoghurt and cream until thick.
Spread over the raspberries.

Sprinkle liberally with demerara sugar and chill
overnight to allow the flavors to develop and the
sugar to melt.
