Ingredients

225 g/8 oz
redcurrants, stripped from their stalks

225 g/8 oz
raspberries
-
1 small pineapple
-
45 ml/3 tbsp redcurrant jelly (clear conserve)

150 ml/2/3
cup apple
juice

ml/2 tbsp white
rum
Method:

Put the redcurrants and raspberries in a serving
dish. Cut all the skin off the pineapple, cut into
slices, then into cubes, discarding any thick core.

Add to the other fruit. Put the redcurrant jelly and
apple juice in a saucepan and heat gently, stirring,
until the jelly melts.

Stir in the rum. Pour over
the fruit and leave until cold. Chill for several
hours or overnight. Serve very cold.
