Dessert Recipes - Rhubarb and Honey Smoothie Recipe
Ingredients

450 g/1 lb
rhubarb, cut into short lengths

Grated rind and juice of
1/2 orange

90 ml/6 tbsp clear
honey
-
Pure orange juice
-
15 ml/1 tbsp arrowroot
-
150 ml/2/3 cup
crème fraiche
Method:

Put the rhubarb in a saucepan with the lemon rind
and juice and 60 ml/4 tbsp of the honey. Cook
gently until the rhubarb is tender. Leave to cool.

Pour off the juice into a measuring jug. Make up to
300 ml/1 1/4 cups with orange juice.

Blend
the arrowroot with a little of the juice in a
saucepan. Stir in the remainder. Bring to the boil,
stirring until thickened and clear.

Spoon the
rhubarb into four serving dishes. Pour the thickened
juice over. Leave to cool, then chill overnight to
allow the flavors to develop.

Top with the crème
fraiche, then drizzle the remaining honey over.
