Put the sugar and water in a saucepan and heat
gently until the sugar has dissolved. Bring to the
boil and boil for 3 minutes.

Halve the pomegranates and passion fruit and squeeze
the juice as you would for a lemon. Pour into the
syrup.

Hold the oranges over the saucepan to catch the
juice and cut off all the rind and pith, then slice
and halve the slices and add to the syrup.

Peel the mango and cut all the flesh off the stone
(pit) in long strips. Halve if very big and add to
the syrup. Peel and slice the kiwi fruit and add to
the syrup.

Cut all the skin
off the pineapple, slice the fruit, then cut into
chunks, discarding any thick core. Add to the other
fruit. Mix all together and leave until cold.

Transfer to a glass serving dish and chill for at
least 2 hours to allow the flavors to develop.
