Mozzarella and Herbs (Mozzarella e Odori in Conserva)

Ingredients

225 g/8 oz Mozzarella
cheese, cut into 1 cm/1/2 in cubes

1 red (bell) pepper,
halved
-
1 green (bell) pepper,
halved
-
15 ml/1 tbsp peppercorns
-
2 garlic cloves, peeled
-
2 sprigs of rosemary
-
600 ml/1 pt/2 1/2 cups
olive oil

Italian bread, to serve
Method:
-
Place the peppers skin-sides up under the grill
(broiler) until the skins blacken. Peel off the
skins and slice into thin strips.

Place the cheese,
peppers, peppercorns and whole garlic in a
sterilized wide necked jar.

Carefully put in the
rosemary sprigs and top up with the olive oil.
Replace the lid securely and leave for a week before
serving.

To serve, arrange the cheese and peppers on
individual plates and accompany with bread. Use the
remaining oil as a salad dressing or for cooking
chicken.
