Alla Svelta) Recipe
Ingredients

2 red (bell) peppers
-
2 yellow (bell) peppers
-
1 red onion, finely
sliced

30 ml/2 tbsp olive oil
-
6 eggs, beaten and
strained

15 ml/1 tbsp chopped
fresh sage

1.5 ml/1/4 tsp freshly ground black pepper
Method:

Place the peppers under a preheated grill (broiler)
until the skins blacken, turning occasionally, then
put them in a brown paper bag to soften the skins.

Peel off the skins and finely slice. Heat the oil in
a frying pan (skillet) and cook the onion until
soft.

Stir in the peppers and cook for 5 minutes.
Pour in the beaten eggs and stir until cooked.
Season with the sage and pepper and serve.
