Almond Coffee
Torte (Torta di Café con Mandorle) Recipe
Ingredients

8 eggs, separated
-
175 g/6 oz/3/4 cup caster
(superfine) sugar
-
60 ml/4 tbsp very strong
coffee
-
175 g/6 oz/1 1/4 cups
ground almonds
-
45 ml/3 tbsp semolina
(cream of wheat)
-
100 g/4 oz/1 cup plain
(all-purpose) flour
-
5 ml/1 tsp unsalted (sweet)
butter
Method:
-
Beat the egg yolks and sugar until very thick
and creamy.
-
Add the coffee, almonds and the semolina. Beat
well and fold in the flour.

Stiffly whisk the egg whites and fold in with a
metal spoon. Pour into a greased 23 cm/9 in cake
tin (pan).

Bake in a preheated oven at 180C/350F/gas mark 4
for about 40-50 minutes until the centre springs
back when lightly pressed.
