Almond Trout (Trota alla Mandoria)

Ingredients

50 g/2 oz/1/4 cup
unsalted (sweet) butter
-
4 trout, about 225 g/8 oz each,
cleaned
-
15 ml/1 tbsp plain
(all-purpose) flour
-
5 ml/1 tsp salt
-
Freshly ground
black pepper
-
75 g/3 oz/3/4 cup
flaked (slivered) almonds
-
30 ml/1 tbsp lemon
juice
Method:

Melt the butter in a large frying pan
(skillet). Dust the trout with flour, salt and
pepper.

Fry (sauté) the floured fish over a
moderate heat for 10 minutes, turn and cook for
8 minutes.

When golden brown, transfer to a
warmed serving dish. Add the almonds and lemon
juice to the pan juices.

Cook for 3-5 minutes
until the almonds are golden. Pour over the hot
trout.
