Italian Fish Recipes - Almond Trout (Trota alla Mandoria) Recipe

 

Ingredients

  • 50 g/2 oz/1/4 cup unsalted (sweet) butter

  • 4 trout, about 225 g/8 oz each, cleaned

  • 15 ml/1 tbsp plain (all-purpose) flour

  • 5 ml/1 tsp salt

  • Freshly ground black pepper

  • 75 g/3 oz/3/4 cup flaked (slivered) almonds

  • 30 ml/1 tbsp lemon juice


Method:

  1. Melt the butter in a large frying pan (skillet). Dust the trout with flour, salt and pepper.

  2. Fry (sauté) the floured fish over a moderate heat for 10 minutes, turn and cook for 8 minutes.

  3. When golden brown, transfer to a warmed serving dish. Add the almonds and lemon juice to the pan juices.

  4. Cook for 3-5 minutes until the almonds are golden. Pour over the hot trout.
