Italian Rice Recipes - Chive and Courgette Risotto (Risotto con Cipolline e Zucchini) Recipe

Ingredients

  • 50 g/2 oz/1/4 cup unsalted (sweet) butter

  • 15 ml/1 tbsp olive oil

  • 1 onion, chopped

  • 225 g/8 oz/1 cup risotto rice

  • 900 ml/3 3/4 cups chicken or vegetable stock

  • 450 g/1lb courgettes (zucchini), grated

  • Salt and freshly ground black pepper

  • 45 ml/3 tbsp snipped fresh chives


Method:

  1. Heat half the butter with the olive oil and fry (sauté) the onion for 5 minutes.

  2. Add the rice to the pan and stir for 3 minutes. Pour in a third of the stock and cook until the liquid has been absorbed.

  3. Pour in another third of the stock and continue cooking for 10 minutes.

  4. Add the remaining stock and the courgettes and simmer for 8-10 minutes until the rice is tender.

  5. Season well and stir in the chives and remaining butter.
