Italian Sauces Recipes - Creamy Garlic Sauce (Salsa Vellutata di Aglio) Recipe

Ingredients  

  • 25 g/1 oz/2 tbsp unsalted (sweet) butter

  • 3 garlic cloves, crushed

  • 30 ml/2 tbsp plain (all-purpose) flour

  • 120 ml/4 fl oz/1/2 cup chicken stock

  • 30 ml/2 tbsp dry white wine

  • 1 large egg yolk, beaten

  • 30 ml/2 tbsp lemon juice

  • 60 ml/4 tbsp double (heavy) cream, whipped until stiff

  • Salt and freshly ground black pepper


Method:

  1. Melt the butter in a saucepan and add the garlic. Cook for 2 minutes and stir in the flour.

  2. Blend in the stock and wine and cook for 5 minutes until thick.

  3. Whisk half of the hot sauce into the egg yolk and stir back into the sauce.

  4. Add the lemon juice and fold in the cream. Season with the salt and pepper and serve hot with pasta.
